Tyson Chicken Fry Tacos with Black Bean Mango Salsa

Tyson Chicken Fry Tacos with Black Bean Mango Salsa #ChickenFryTime #CbiasHappy cinco de mayo!  For our church potluck today we are having a Mexican meal, and I’m bringing my Tres Leches cake and Charro beans.  Even though our meal at church will be festive, the kids have been missing our family holiday meals.  I knew it would be a busy day with cooking for church and other things, but I could still throw together a simple Mexican meal to celebrate with my family with some help from Tyson.

DSCN1275 1I went shopping at Sam’s and tried the new Tyson Chicken Fries at their demo.  The kids begged to take some home.

Black Bean Mango Salsa Ingredients

When it was almost time to eat I quickly gathered the ingredients to make the Black Bean Mango Salsa.

Black Bean Mango Salsa
1 (19 oz)can black beans, rinsed and drained
1 mango, peeled and chopped
1/4 cup chopped red onion
1/4 cup chopped fresh cilantro
1 small Serrano pepper, chopped
1 tablespoon olive oil
3 tablespoons fresh key lime juice
2 teaspoons brown sugar

Black Bean Mango Salsa

Place all ingredients in a 1 quart serving dish and toss gently.  Done.  Yum!

Tyson Chicken FriesWhile I was making the Black Bean Mango Salsa, I preheated the oven and baked the Chicken Fries according to package directions.

Cinco de mayo with Tyson Chicken friesWhen they were done, I placed everything on the table along with some chips and salsa and Sangria Senorial (non alcoholic) bottles from Mexico.

cinco de mayo partyThe kids called this our mini cinco de mayo party!  It was fun, festive, yummy, and only took about a half hour to prepare!

Enjoying Chicken tacos with black bean mango salsaTyson Chicken Fries were a huge hit with the kids.  Faith loved the tacos!

GansitoFor dessert I bought Gansitos at Sam’s.  These are little chocolate covered cakes with cream and strawberry jelly inside them.  I loved them when I was little and lived in Mexico.  They are a true classic.  Little Jason was excited to try his!  The kids weren’t as excited about these as I was.  They liked them okay, but they saw me making that Tres Leches Cake all day and were really wanting that.  🙂
