In 2013 I had the amazing opportunity to visit Peru with Operation Christmas Child. It was an incredible experience to see how the organization works and be a part of giving children their shoe boxes. Tasting food is always a travel experience I look forward to and the food of Peru did not disappoint! I loved the food!
One day we had ceviche, and I was so surprised that ceviche there was completely different from the Mexican ceviche that I grew up with. While I have enjoyed ceviche in Mexico, I have never prepared it at home using raw fish. Do you make ceviche?
Instead, I make it using canned tuna! While you could enjoy this recipe with crackers or in tacos, we always serve it over tostadas!
Ingredients:
2 cans tuna, drained
8 the juice of at least 8 key limes
2 plum tomatoes, finely chopped
3 green onions, chopped
1/3 cup chopped cilantro
1 Serrano pepper, finely chopped
Salt to taste
Mix all ingredients in a glass bowl.
Serve on tostadas and enjoy!
So easy and full of a delicious clash of flavors. This is a light meal that doesn’t heat up the kitchen. In Texas that’s almost all year round! 😉
