Summer Salads

With the Texas summer heat, nothing sounds as good for supper as a delicious salad.  I have found myself making Strawberry Spinach Salad and Taco salad as a complete meal several times already.

Ingredients I added:

Spinach
Strawberries
Blueberries
Feta Cheese
Praline pecans
Raspberry Walnut Vinaigrette Salad dressing
Freshly ground pepper

When I have served this salad to my husband I have also added grilled chicken.

Our family makes Taco Salad different from any I’ve ever had elsewhere in my adult life.  When I was a kid we ate supper at a family’s house that served a similar taco salad.  My mom liked it so much she asked for the recipe and it has been our favorite ever since.  I wonder how much it has changed over the years.

Taco Salad Ingredients:

1 package romaine lettuce
1 pound ground beef browned and seasoned for tacos
1/2 can Ranch Style Beans
1 avocado, chopped
2 plum tomatoes, chopped
2 green onions, chopped
Shredded Cheese
Fritos
Catalina Dressing
Freshly ground pepper

The Catalina dressing just makes the salad.  You HAVE to try it with Catalina.  Recently I substituted the “Lite” with fear and trembling, but I didn’t notice the difference.  It was delicious!

Most of my children will (happily) eat both of these salads. What is your favorite salad as a meal?  I’m on a roll here and would love something new!

    I remember when we first had that salad! I don’t think it could be improved upon. I’ve also had the spinach-strawberry salad at your sister’s house.

    That’s exactly how we make taco salad! With the ranch beans and Catalina and everything! People think Catalina on taco salad is weird, but you just have to try it. I was introduced to this version of taco salad by one of my college roommates, and I have made it that way ever since!

    @Christina, I just eyeball it, but I’d say I use about 1/4 of the bottle in one batch.

    How many people does this serve? I need it for 5 adults and a 3 year old. Should I double the recipe or will I be alright?

    @Allison, This recipe feeds my family of seven, two adults and five kids. We eat every bite, but we don’t serve anything else, just the salad. If you have big eaters a double recipe would probably work great. If you’re serving lots of dishes alongside, a double recipe would probably be too much. Is this helpful? 🙂
