I love Casseroles. I always have. As a kid, when my mom was making a casserole, I just knew it was going to be something yummy, but as a mom there is so much more to love!
Casseroles can usually be made ahead of time! Whether it’s just assembling the ingredients earlier in the day and refrigerating the casserole or freezing it for a future date, I love that casseroles can be made ahead of time!
I am always looking for great new casseroles to try. I’ve got my eye on that Mexican Beef & Corn Casserole I found on Country Crock’s Facebook page. They had me at the words “casserole” and “Mexican!” Yum!
Another time saving tip I have learned is to buy ground beef and chicken in bulk. I fry 5 or 10 pounds of ground beef at a time with onions and green peppers and then freeze it in one or two pound increments in freezer bags. I also place 5 or 10 pounds of chicken in slow cookers, cover with water and cook for about eight hours or until the chicken is falling apart. I chop up the chicken and freeze in two cup increments. This way I always have ground beef or chicken ready for casseroles, and it makes assembling them so much faster.
Tortilla casseroles are my favorite. I think I have about five varieties of tortilla casserole recipes and I love them all! So whether I’m just preparing for a busy day, freezing a meal for an emergency, or taking a meal to a friend casseroles rock!

Yummy-there is just something about a good casserole! It is total comfort food! I have never made a tortilla casserole but I am going to now!
