Busy. It’s my standard answer when asked how I’m doing. With little kiddos you’re busy even on the days you don’t have any pressing matters. Good grief! So when you have deadlines, places to be, and sick kids, things just go crazy busy. There’s busy, crazy busy, and then there’s Mom gets sick busy because life goes on even when mom is sick. One by one Jason and the kids all came down with a cold or virus. I thought I might just beat it, but nope I was the last one. I guess it’s good that the rest of the family was feeling better, but when it comes to what’s for supper everyone still looks to Mom!
I love to find easy and delicious meal solutions for just this kind of occasion. I was so happy to have this opportunity from #CollectiveBias to browse Walmart for some Kraft Cheesy Skillets. These are so great to have on hand for any of those busy times. When I’m sick I want comfort food! Creamy Beef Stroganoff sounded so perfect and yummy. #CookinComfort made easy!
With a family of seven and because I like leftovers, I made a double batch using two boxes. The only think I like to add is onions (and green pepper when I have it) to the ground beef as it’s cooking.
Brown the meat then add the milk, water, pasta, and seasoning. Bring to a boil and let simmer for 8 minutes. So easy! While the stoganoff simmered, I mixed up a quick salad and washed grapes.
Remove from heat. Stir in the cheese sauce and supper is ready! It took me an added 10 minutes cooking time since I made a double batch. Dinner in 30 minutes for a big family. That’s hard to beat.
I got to sit down and enjoy our lovely meal with the family. Then I let them do the clean up! Now that it’s all done though…why didn’t I let my daughters do the cooking? Next time I think I will.

I love these Kraft skillets too, especially when they come with coupons attached and are on sale costing me about $1 out the door. When I find them on sale I buy at least 10 and usually use up at least one a week. Even my picky picky 20 month old LOVES the chicken and rice-like pasta one 🙂 I am so happy I took a chance and bought one a few months ago!
