Barbecue Cripsy Chicken Quesadillas with Mango Salsa

Barbecue Crispy Chicken Quesadillas with Mango Salsa #MealsTogether #CBiasOh my goodness these Barbecue Crispy Chicken Quesadillas were so, incredibly good.  They were a hit with the whole family!

Meeting Tony CasillasIt all started on Saturday at Sam’s Club in Dallas!  I think everyone was getting ready for a Football Party!  We got to meet NFL football great Tony Casillas!  He was so nice and even chatted with the kids!  He even signed a card for several of us!  This was so exciting just the day before the Big Game!

Tyson Chicken at Sam's ClubThen we went over and sampled Tyson Crispy Strips with KC Masterpiece Barbecue Sauce and Coke Zero.

Sampling Tyson Crispy ChickenOur four year old tore into his!  Yum!  Everyone was amazed that Coke Zero really has no calories; even the kids loved it!  We enjoyed walking around Sam’s Club and picking up our groceries.  It was family fun!

Tyson Crispy StripsSunday morning we baked a pan of Tyson Crispy Strips to take for the church potluck.  We just put them in the Crockpot after they came out of the oven and by lunch time they were still warm and crispy.  They were a huge hit.  Every crumb was gone!

At home I decided to get creative with our food and that’s when the idea for Barbecue Crispy Chicken Quesadillas was born.  I baked about four large strips and then thinly sliced them.

Make Mango SalsaWhile the chicken was cooking I made the mango salsa.

Mango Salsa Recipe

Mango Salsa
2 large mangos, diced
4 green onions, chopped
¼ cup chopped cilantro
1 diced Serrano pepper
The juice of two key limes

Fry both sides of tortilla in butterTo make the quesadillas lightly fry both sides of each tortilla in butter.

Quesadillas cheeseAdd cheese to one half of each tortilla.  I used 4 cheese Mexican blend.

Quesadillas with Crispy Chicken #TysonAdd the sliced Crispy Chicken strips.

Barbecue Chicken QuesadillasSqueeze desired amount of KC masterpiece Barbecue Sauce over the chicken and top with more shredded cheese so that there is cheese on both sides.

Barbecue Crispy Chicken QuesadillasFold the tortillas over and continue to grill over low heat until both sides are a crispy light brown and cheese is melted.

Barbecue Chicken Quesadillas
6 large flour tortillas
4 Tyson Crispy Strips, cooked and sliced
KC Masterpiece Barbecue Sauce
Shredded cheese (I used 4 Cheese Mexican blend.)
Butter

    That mango salsa looks so good. Thanks for the recipe. We’ll be trying that the next time I make Quesadillas which is a weekly thing around here!
