How I love soup in the fall. With the beginning of school I just start craving soup. So what that it’s not literally fall yet!
At this time in my life you know I am always looking for delicious but quick and easy ways to prepare food at home. This V8 Soup I came up with one evening when I needed supper in a hurry. I took a quick scan of my food inventory and this meal was born. My family loved it so much it’s one they’ve requested over and over.
What you need:
- 1 (64 oz) bottle of V8
- 1 tablespoon dried basil
- 2 cups heavy whipping cream
- salt & pepper to taste
In a 4 quart dutch oven add the bottle of V8, basil, and salt & pepper. Bring it to a boil over medium to medium high heat stirring often.
Reduce heat to low and add the cream. Continue cooking and stir until the soup is hot.
Serve! My kids thought it tastes like the Medieval Times Soup. It isn’t really that similar. The soup at Medieval Times isn’t creamy. They love the tomato soup at Medieval Times. The more I thought about it, maybe it has something to do with the texture. This is not a thick soup though if you prefer thick you could always add corn starch or flour to thicken it. Personally, I prefer thin brothy soups and evidently my family does too.
I love to serve tomato soup with grilled cheese sandwiches or crusty bread. This time I made cheesy garlic bread. Mmm! This is so good and ready in less than 30 minutes!
