Twice baked jalapeno potato casserole with greek yogurt

We found steak for under three dollars a pound on Sunday so my husband said he’d grill it  for supper.  I made this twice baked jalapeno potato casserole  and a lettuce salad with avocado and cheese to go with it.    Yum!

My kids eat potatoes a whole lot better if they don’t see the skin so I made it into a casserole.  🙂

Here is the recipe for the potatoes:

4 medium or 2 very large potatoes

3 tablespoons butter

1/2 cup of Greek Yogurt

1 cup shredded cheddar/jack cheese

3 tablespoons chopped pickled jalapenos

Salt and pepper to taste

I baked the potatoes wrapped in tin foil with a little extra butter at 400 degrees for about an hour.  The skin was so tender that it fell right off.  I hated to throw it away.  Then I coarsely mashed the potatoes with the rest of the ingredients except half of the cheese.  Then I baked it with the additional cheese on top for about 25 minutes.  This was a huge hit at our house with everyone except our one daughter that doesn’t like anything spicy.  We’re not real sure how she got stuck in our family!

    The casserole looks great and the salad sounds delicious. I sympathize with the one who doesn’t like spicey food. Maybe I can guess how she got in the family.

    What a great idea to make this into a casserole! I wonder how much ahead you could make this before baking? How about freezing it?

    This looks so delicious. That’s funny that everyone loves spicy except for your daughter. Here everyone loves cheese except for my oldest son. Guess he won’t be joining in when I try to make this dish. 🙂

    Anything with white starch sounds good to me! It looks pretty easy to make, too. BTW, I’ll drop off the clothes some time this week. Hope you have space for 3 bags!

    Melinda, I think it would work up to a day ahead, just bake it longer. I’m not sure if it would work to freeze it.

    This sounds easy and wonderful! Thanks for sharing. I have one picky teenage daughter, one that eats anything and a Mexican man that is kind of picky. This will definitely work. Also, your kids are adorable!
