Slow Cooker Pork simmered in Pineapple juice recipe

I haven’t been in the experimenting mood in a while so I’m not sure what came over me this week, but I felt like making something that is all my own.  I wasn’t even sure what I was making at first, but it came out really tasty! 

Slow Cooker Pork over rice

Ingredients:

2 lbs. boneless pork loin chops

1/3 cup chopped onion

1 teaspoon each:

(Salt

Onion Powder

Paprika

Chili Powder

Garlic Powder

Black Pepper)

1 cup pineapple juice

The juice of three key limes.

I actually tripled these ingredients for my family so that we would have enough for leftover lunches and some to freeze for later. 

The night before mix the dry seasonings and sprinkle over pork.  Marinate overnight.  In the morning, chop onion and place in the bottom of slow cooker.  (If you like the onion flavor but don’t really like eating onion in your food, just cut add a chunk of onion and lift if out when cooking is finished.)  Place the pork over the onion and then add the juices.  Cover and cook on low six to eight hours. 

Crock pot pork in pineapple juiceWhen the meat was done, I used a spoon so shred the pork chops inside the Crock Pot.  It was super easy since the meat was so tender, but it wouldn’t be necessary to shred the meat.  The juice was so yummy that I cooked white rice and served it over rice. 

Everyone in my family liked it!  It’s hard to find a recipe that everyone will eat and like so I was thrilled with this.  Next time I think I’ll add peppers for color, but I will definitely be making this again.

    I remember the days when you would not vary for from the recipe one iota, nor try to cook anything without a recipe. Your recipe looks delicious.
