Sausage and Potato Skillet

Sausage and Potato Skillet Dinner

A sausage and potato skillet is one of my favorite meals.  I’ve been making various versions since I was in junior high.  For a while, I only made it with summer sausage.  Then I went through a period when I made it with hot dogs.  Use chorizo and make it tacos.  Every way I’ve ever tried it is always good! 

Potato Sausage Skillet main ingredients

Ingredients:
  5 medium potatoes, about 2 pounds peeled and diced
1 medium yellow onion, chopped
1 package sausage (13-16 oz) sliced
1-2 tablespoons olive oil
  salt and pepper to taste
1/4 teaspoon paprika

Chop onions and sausage add olive oil

What can be a little time consuming is peeling the potatoes and chopping the potatoes, onions, and sausage.  I chop the onions and slice the sausage first.  Then add them to a medium skillet with 1-2 tablespoons olive oil.

Fry onions and sausage

Fry the onions and sausage until the onions are tender and the sausage is beginning to brown.  While the sausage and onions are cooking, peel and chop the potatoes.  Add the potatoes to the skillet.  Gently stir.  Reduce heat to medium low.  Cover and cook for about 20 minutes or until potatoes are done, stirring often (about 3 or four times) to prevent burning.  When potatoes are done, sprinkle with the salt, pepper, and paprika. 

Sausage and Potatdo Skillet Dinner

Add a chopped salad, and it’s a yummy homemade meal that takes about an hour to make.  I love to eat the potatoes and sausage with Ketchup and green salsa.  Yum!  There are rarely any left overs when I make this Sausage and Potato Skillet, and if there is a helping left over I have to fight my husband for it.

    this looks exactly like something I do only i serve scrambled eggs on the side as breakfast for dinner and add chopped peppers with the onion 😉

    I’ve been making this for years too, but I take a package of frozen broccoli florets and steam them in the microwave until just tender, then add them with a gob of butter during the last five minutes. We eat it with garlic toast or garlic bread – and I’m making this tonight!

    i make this too but I use way more paprika and also sometimes use hotdogs I instead of sausage. Both are good though.

    Sauté the potatoes in an inch of water mixed with a bit of oil. When they start to color as the water evaporates add onion and sausage and mixture will be crispier!

    Just made this for dinner, used cumberland sausages & served with baked beans. Was delicious! Even my 3 year old enjoyed it! So filling.

    I just wanted to let you know that this meal was yummy!!! My kids (6 and 5) both loved it and asked for seconds. It was easy to make and not too time consuming. I WILL be making this again in the near future. Thank you for sharing this wonderful recipe!!

      Yes! I’ve made this with frozen potatoes. It still comes out good and does save a little time, but personally I prefer this recipe with fresh peeled and cut potatoes. You can also use cut up baked or boiled!

    Made tonight and it was a big hit with the family. No leftovers! I followed the recipe exactly. Your instructions were perfect and easy to follow. There’s some prep involved but otherwise is easy and so yummy!

    Since I’m eating Paleo, I use sweet potatoes and parsnips with onion, sweet Italian sausage and sometimes some diced zucchini for a bit of green. I think I’ll try this without sweet potatoes and add sweet peppers instead.

    Instead of pre-cooked sausage, I used Italian hot sausage. And I added some thyme and bacon I needed to use or toss. Plus, used marsala wine sauce to get the browned bits from the bottom of the pan. Delicious!

    If you are in a hurry, precook the potatoes in the microwave for a couple minutes, then peel and cut. They will brown up faster. You can also add frozen steamed peas for colour and balance.

    We LOVE this recipe and we use really flavorful farmer style. I might try adding cheese to the recipe to change it up.

    Trying this with kielbasa. We make this with Italian sausage and call it S.O.P.P. sausage, onions, potatoes and peppers. I boil the potatoes before frying. It’s a family favorite
