Quick and Easy Scrambled Egg Tacos

Scrambled Egg TacosI love breakfast foods for dinner.  One of my, “Oh my it’s dinner time, and I don’t have a plan” stand by dinners is Scrambled Egg Tacos.  They literally take fifteen minutes to prepare and serve.  My family loves these! 

Ingredients:
  12 large eggs
2 tablespoons olive oil, butter, or bacon grease (my favorite)
1/4 cup bacon bits or ham
1/2-3/4ths shredded cheddar cheese
salt and pepper to taste

Scrambled eggsI always crack the eggs on the sink rather than the bowl so that shell fragments don’t fall into the bowl.  Then whisk the eggs to scramble them.  A fork works great to scramble the eggs if you don’t feel like dragging out a whisk! 

Scramble the eggsHeat the oil over medium high heat in a large frying pan.  When hot, add the eggs, salt, and pepper continuously scraping bottom of pan to prevent burning and cook evenly. 

Add bacon and cheese to scrambled eggsWhen eggs are almost done add the bacon.  Stir.  Sometimes I fry bacon, but I love to have these packages of real bacon bits on hand to add to dishes in a hurry.  I don’t like mushy scrambled eggs so I cook them just until they no longer appear gooey. 

Scrambled eggs with bacon and cheeseRemove from heat and mix in the cheese.  Serve immediately. 

Bacon egg and cheese tacosWe always serve these with salsa.  When fresh isn’t available we love green bottled salsa.  My current favorite is the La Costena!

    Breakfast burritos are one of my favorite foods! I have never tried to make breakfast tacos. Since I already have all of the ingredients needed for this recipe I will try and make these tomorrow! They look delicious!

    We love these! We usually mix in pre-cut kale or baby spinach to get a vegetable into the plates too!
