Queso as a meal recipe

I’m one of those people that love appetizers and finger foods.  When I go to a restaurant, it’s usually the appetizers that look the best to me.  Christmas parties?  I’m happy with the snack foods and dips.  So you shouldn’t be surprised that I figured out how to have Velveeta & Rotel Cheese dip as a main dish!

Queso as a mealYum!  We enjoy Queso with tortilla chips.  This is a meal that makes all the kids smile.

And here is my secret ingredient:

Secret ingredient in my quesoSteamfresh Lightly Seasoned Southwestern Style Rice with corn, peppers, and onions.

Queso recipe:
1 lb Velveeta
1 can Rotel with green chilies
1 lb ground beef, browned
1 package Steamfresh Lightly Seasoned Southwestern Style Rice with corn, peppers, and onions cooked according to package directions.

Place cheese, Rotel, ground beef, and Seamfresh vegetables in a 2 quart heavy sauce pan on medium low until the cheese is melted and piping hot.  Stir frequently.  Also may place in a slow cooker for 2-3  hours until hot.

    You could use made-from-scratch Mexican rice just as well, couldn’t you? That is if you didn’t happen to have the convenient package. We used to make rice nearly every day. It would be easy enough to add some corn, etc. in it.

    I just read it again. I at first read it too fast and thought you put the cheese mixture over the rice, but I see it is all in one. Very ingenenious! Really sounds good.
