Potato soup has become one of our comfort foods especially during the Fall and Winter Months. I had been waiting until the weather cooled down before making it. The kids were so excited! Potato soup is one of those foods that I’ve made so often I just dump in the ingredients I have on hand. It comes out a little different each time, but it’s always good, except for the last time I made it before the long summer.
My parents were here visiting and since they like my potato soup I decided to cook some for supper one night. It is always a challenge for me to cook and talk at the same time, but potato soup would be easy enough I thought.
Everything was ready and I served the bowls. I sat down to eat last. No one had commented on the food like usual. Taking a sip of my soup I made a face. It was so bland. It didn’t take good at all. In fact it was something like creamy water with a few potatoes floating around in it. I apologized for the horrible soup, but I couldn’t imagine how it had turned out so bad.
So making it again the other day I was a little nervous. Had I lost my touch? Was my potato soup making ability lost forever. I put in the ingredients and let the onions and potatoes cook. Then I put in the milk and cream. I held my breath as I tasted it. Once again it tasted like creamy water! And then like flash the answer came to me. Chicken broth–I had omitted the chicken broth! No wonder! I quickly stirred in some Better Than Bouillon, tasted it again, and voila, delicious! How could I have possibly left out the chicken broth? I’m still shaking my head. I suppose I could blame it on the pregnancy? 🙂

You could blame the pregnancy. And some people might actually fall for it. HaHa!
I make taco casserole frequently. We had our friends over for dinner one night, and as soon as we started eating, I remembered that I had forgotten the seasoning. UGH! Oh well.
So, then I made it when my in-laws were visiting. My friend told me “Put the taco seasoning right on your counter so that you don’t forget it again.”
Guess what I forgot again.
Potato soup is definitely one of my fav’s. My youngest daughter and I flock to almost any soup that has a rich potato taste. It really is a comfort food, along with crusty bread.
Oh I would definitely blame it on the pregnancy 🙂 Are you going to share your potato soup recipe that’s in your head?
I made some last week and it was yummy. I make it with vegetable broth and milk in the crockpot and at the end add sour cream and cheese. Yummo!
We also love potato soup. It’s such a comfort food in the winter, and filling too. I haven’t tried adding cheese though, that sounds delicious.

We all make those kinda mistakes—I’ve never been able to cook and entertain/talk at the same time! I like to have my stuff in the kitchen mainly done before I have guests over, then less margin for error on my part. lol.
I make a potato soup that I think is simply the best..and it doesn’t call for chicken broth. In fact, I’ve never heard of chicken broth being used in potato soup!? Maybe I’m just out of touch. Anyway, I’m glad you figured out the error of your ways!

haha, I hate when this happens. I always forget if I but in salt or not. And I rarely taste when am cooking until I sit to eat. Glad that you were able to fix the soup though… I hate wasting food.
