I’ve told you before how this blog is a family affair and though I do most of the technical work everyone participates. Jason has been making various taco concoctions to eat for lunch on days that there aren’t enough leftovers to take to work. Every once in a while he invents one that he thinks is fantastic. This one he deemed blog worthy as to told me to, “Go get your camera and take a photo so you can put my recipe on the blog.” And so I did!
For the record…I haven’t tried it. I was able to legitimately claim leftover flu illness. But my eldest daughter Faith tried it and then begged Daddy to make her one so we might just all have to give it a try.
Flour Tortillas
Canned Tuna
Chopped Tomatoes
Shredded Lettuce
Grated Cheese
Fresh Key Lime juice
Frank’s Red Hot Wings Buffalo Sauce
Mayonnaise
So what do you think? Are you going to give it a try? It sounds pretty healthy don’t ya think? He has a turkey, bacon, buffalo taco that he says is coming soon. Now that one sounds like a winner to me!

Making it tonight with some starkised buffalo tuna I from the food bank. Sounds nutritious, yummy and affordable. I will substitute veganaise and add water chestnuts bc that’s what I got. Have tomatoes and onions and lettuce. I wanted jicama or cucumber for crunch but I do not have any, Rachel Ray suggested water chestnuts in a can, which I have too from food bank. I’ll let you know, and thanks for your creativity and inspiration!
