Did you know that Irritable bowel syndrome, or IBS, is very common? It’s very likely that you, or someone you know suffers from this chronic condition. Healthy diet decisions are a must when managing IBS.
It is important to know which ingredients trigger IBS symptoms, eliminate them, and prepare yummy foods! Lactose is one of the things in foods that may irritate IBS. It is one of the foods that we are limiting in my husband’s diet. But as we have learned that doesn’t mean we can’t have yummy foods.
I recently made Lactose Free Italian Hot Chocolate and Pumpkin Bread Pudding. Both were hits!

What you need:
- 1 1/2 cups lactose-free milk
- 3 tablespoons sugar
- 3 tablespoons cocoa powder
- 1 tablespoon cornstarch
- 1/4 teaspoon vanilla extract
- pinch of salt
Just mix the dry ingredients in a container with a two cup mark.
Then pour in the milk to the two cup mark. Stir. Heat in the microwave until hot. Enjoy!

Second we made Pumpkin Bread Pudding. It’s this time of year that I just crave bread pudding and thought pumpkin would be a yummy twist.
- 2 tbsp melted butter
3½ cups cubed day-old sourdough bread
½ can (16oz) pumpkin
5 large eggs
⅔ cup brown sugar, firmly packed
1 tsp cinnamon
1 tsp ginger
½ tsp nutmeg
2 cups lactose-free milk
Grease a 8×10 baking pan well with the butter. Then add the bread cubes. In a mixing bowl add the rest of the ingredients except the milk and mix well.
Next add the milk and stir until it is well blended.
Pour the mixture over the bread cubes and let it soak into the bread while the oven heats to 350 degrees. Bake for 55 minutes or until it is done and the middle is slightly puffy. Enjoy warm as it is or indulge with a scoop of lactose-free ice cream!
