Homemade Nacho Cheese

Nachos, nachos, nachos! We just can’t get enough.  We’re getting ready for the Big Game with a variety of nachos perfect for a diverse crowd.  With Buffalo Chicken Nugget Nachos and BBQ Chicken Nugget Nachos ready to go, I wanted a simple Homemade Nacho Cheese Recipe for some of the less adventurous eaters. 

Now I am a real cheese lover and while I do use processed cheese in dips and sauces sometimes, there’s just nothing like real cheese!  Making your own nacho cheese is much simpler than you’d think. 

Here’s what you need:

  • 4 tablespoons butter, melted
  • 1/2 medium onion, diced
  • 2 garlic cloves, pressed
  • 4 tablespoons all-purpose flour
  • 2 cups milk
  • 4 cups (1 pound) shredded cheese (I used Monterrey Jack and a Fiesta Blend.)

In a heavy sauce pan over medium heat melt the butter, and then cook the onions until they are translucent and tender.

Add the pressed garlic and saute an additional minute.

Stir in the flour and cook an additional minute or two.

Add the milk stirring constantly. Begin adding cheese by handfuls stirring until the cheese is melted. Continue until all the cheese is stirred in and melted. 

I cook with cheese a lot.  Occasionally the cheese will become stringy instead of saucy.  If this is the case, you can stir in a little white wine or lemon juice.  I’m not sure why, but something acidic will cut the stringy cheese.  But stringy cheese is fun so don’t feel like you have to add anything if you don’t want to.  Kids in particular will have lots of fun with the messy cheese.
