I’ve been craving comfort food. Delicious, rich, spicy anything sounds wonderful right now. Tortillas, cheese, and salsas/jalapenos are staples around here, and I love experimenting with them. I mean really those three things, add a few more ingredients, and I haven’t gone wrong yet!
Ingredients:
18 corn tortillas
2 cups cheese, shredded
1 1/2 – 2 pounds sliced ham
1 cup green salsa (or 1 can chopped green chilies)
1 3/4 cups heavy whipping cream
Layer 6 tortillas in a 13×9 inch baking dish and top with ham slices and 1 cup cheese.
Layer 6 more tortillas, another layer of ham, and then the salsa. Whenever I’m not baking my own ham I always buy Cure 81. I’ve tried lots of brands and have found this one to consistently be the best.
Then top with another layer of tortillas, the remaining up of cheese, and pour the cream evenly over the top making sure to moisten all the tortillas.
Bake in a 400 degree preheated oven for 30 minutes or until casserole is bubbly and the cheese is slightly brown . Let it rest for about ten minutes before serving.
I love spicy food! My husband always said I should open a restaurant and call it, “Esther’s Spicy Restaurant.” When I’m looking for recipes, I’m always drawn to anything spicy. Though this recipe is toned down enough that anyone could enjoy it. We actually ate it with jalapenos!
