When I was first married I began making foldover pizzas. It was love at first bite. This sausage, cheese, and veggie filled pizza is so flavorful that it instantly became my favorite. Surprisingly, there is no sauce inside the pizzas, but the cooked grape tomatoes are all you need. Feel free to serve these with marinara sauce, but I don’t think they even need it. The Asiago cheese gives it an extra special flavor that makes your taste buds happy dance.
This is a super easy recipe, but does require multiple steps and some time. In the end, this is one of those recipes that’s so worth it. We love it!
Feel free to use your own pizza dough recipe or frozen dough if you’d like. You need enough dough for 3 12 inch pizzas or 6 servings.
Pizza Dough Recipe:
- 2 packages active dry yeast
- 1 1/2 cups warm water
- 3 3/4 to 4 cups flour
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon sugar
In a large bowl dissolve the yeast in the water. Stir in the flour and remaining ingredients. Adding a little more flour if needed to make the dough easy to knead. Knead for about 10 minutes. Place the dough on a lightly floured surface. Cover and let rise in a warm place for about 20 minutes. Punch down and refrigerate for about two hours.
To make the pizza dough a breeze, I add all the ingredients to my bread machine and use the dough setting. When it is done I put the dough on a lightly floured surface and cover for about 10 minutes and proceed to make the volcano pizzas.
When ready, divide dough into three balls. Grease three cookie sheets and pat though dough out into 12 inch circles.
What you need for the filling:
- 2 tablespoons butter
- 4 garlic cloves, pressed
- 2 medium green peppers, chopped
- 1 medium onion, chopped
- 1 pound bulk sausage
- 4 cups shredded mozzarella cheese (16 oz)
- 2 cups shredded Asiago cheese (8 oz)
- 1/2 teaspoon pepper
- 12 cherry tomatoes cut in half
While the dough is rising, prepare the filling. Chop the veggies.
Fry the sausage, onions, peppers, and garlic in the butter over medium high heat stirring frequently until the sausage is brown and the veggies are tender. Refrigerate until cool.
Add the tomatoes, pepper, and cheeses to the cooled meat mixture. Divide filling into thirds.
Place the filling more to one side of the pizza dough circle.
Gently lift the pizza dough and fold over the filling. Press the edges together to seal. Poke a few holes on top or make a small slit to help let the steam out when cooking. Do the same for all three pizzas.
Bake in a 350 degree preheated oven for 30 minutes or until golden brown.
A salad pairs perfectly with these delicious fold over pizzas! Enjoy! Half a pizza is an adult serving. Be careful. Cheese will be hot and flow from the pizza when cut. Yummo!
