When my husband and I were first married, we took a trip to Colorado to visit some friends of mine. We were planning a day of skiing. It had been decided that we would take sandwiches to make the trip more economical. My friend and I went to the grocery store to purchase the food we needed. To my surprise she went to the deli to pick our our meat and cheese. I had never done that before. She had a sparkle in her eye and said, “These are my favorite!” as she picked out the meat and cheese.
The day arrived. It was crazy as I was the only non skier of the group and didn’t catch on as quickly as everyone had hoped. By lunch time I was very ready for a break. The men kept on skiing so my friend and I climbed in her car to get out of the cold to eat our sandwiches. I was hungry, but not that excited about a plain old sandwich, which is how I had always thought of sandwiches. Then I took a bite. Oh my goodness. It was so good! My friend completely changed my opinion of the sandwich.

As a busy mom I look for delicious, quick meals to prepare for my family. Many times when I know we will be coming home late or will have company I plan to have yummy sandwiches.
