What is game day like at your house? Growing up the kids were all shushed and scooted out so Dad could hear the game. My love of football came while living in a college town. Every game day was thrilling whether you actually went to the game or not. Game days are more social for us whether it’s getting together with friends or just us hanging out as a family. We all look forward to some good snack food. Even the kids who don’t particularly enjoy the game otherwise, get into game day for the food!
Fun and festive does not have to take all day. This quick and easy Buffalo Chicken Cheese Dip is one of our favorite game time snacks. Served with buttery delicious Ritz Crackers and paired with an ice cold Coke it is divine! It’s so easy to find everything you need including Coca-Cola and Ritz Crackers at Walmart!
Buffalo Chicken Dip Ingredients:
- 3 cups chicken (I use canned or rotisserie chicken, so easy)
- 2 (8oz) blocks of cream cheese, softened
- 1 cup buffalo sauce
- 1/2 cup ranch dressing
- 1/2 cup blue cheese crumbles
- 1 cup shredded cheese, divided
Mix and bake in the same dish! I use a 1 1/2 quart glass baking dish, but it gets filled to the very top. If you want some room use a 2 quart dish. Preheat oven to 350 degrees.
Add all the ingredients except 1/2 cup of the shredded cheese and combine.
Top with the remaining half cup of cheese. I love cheese and just keep adding cheese till it’s amply covered. Yum! Bake for about 40 minutes until dip is hot and cheese is melted.
Microwave version: For an even quicker method, microwave all ingredients except the 1/2 cup cheese on top until hot, stopping to stir several times. You can add the cheese on top and microwave just until it’s melted or broil it if you want the cheese topping to have the baked texture.
Slow Cooker version: Add all ingredients to your slow cooker except the 1/2 cup of shredded cheese and combine. Top with remaining cheese. Cook on low 2 hours or until dip is hot and cheese is melted.
I use the Buffalo Cheese Dip as my “main dish” snack, and then just add various fruits, veggies, sliced cheeses, and anything else I can find to my snack bar while the dip is baking. Paired with a Coke I’m in heaven. It’s a party in less than an hour total!
