Broccoli Salad Recipe

Broccoli SaladHow I love a good Broccoli Salad!  I didn’t know it though, not for many, many years.  You see I had tried broccoli salads and they always contained (ick) RAISINS!  Now I’m not completely prejudiced against raisins.  They have their proper place–covered in chocolate!  But in a broccoli salad?  No thank you!  Here is my raisinless salad recipe.  🙂

Ingredients:
8 oz bacon
5 cups small broccoli flowerets
1 Cup cheddar cheese, grated
1/3 Cup chopped onion
1/4 Cup sugar
1 Cup Mayonnaise
1 Tablespoon Cider Vinegar
 
Fry baconFirst fry and drain the bacon. 
Broccoli Salad mayonaiseWhile bacon is cooking, mix the Mayonnaise, sugar, and vinegar in large bowl.  I usually just make it in the serving dish to save on dishes! 
Broccoli Salad ingredientsWhen in a hurry, I love to use packaged broccoli flowerets and pregrated cheese. 
Broccoli Salad with Bacon and CheeseStir in the broccoli, bacon, and cheese.  Enjoy!  I prefer to eat this right away.  That way the bacon stays a bit crunchy, but most broccoli salad recipes I find say to refrigerate it for an hour or more before eating.  I think it’s so much better fresh and crunchy.  Is it just me or does bacon  just make everything better?  🙂

    No doubt in my mind, everything gets better with bacon. And I would never put raisins in anything 🙂
    Great recipe, love broccoli and always looking for new ways to serve it.

    I make something similar to this but put Craisin’s in it. I also use the precooked Oscar Mayer bacon bits or pieces.
