Lately I have been taking full advantage of any quick and easy meals that I can put together. This recipe originated because I found these bean burritos on sale and bought several packages thinking they would be something for anyone to microwave and eat in a hurry. Well, none of us especially liked the burritos by themselves. I couldn’t waste several packages of burritos, so I tried making a Bean Burrito Casserole, and it was a hit!
Ingredients:
1 package of 6 bean burritos
1 can cream of chicken soup (10 3/4 oz)
1 cup sour cream
1 cup green salsa
1 cup shredded cheddar cheese
Place the frozen burritos in a greased 11 x 7 x 2 inch baking pan. Mix the sour cream, salsa, and soup together. I used La Costena in this recipe, and it is my favorite, but it is on the spicy side. If you prefer a milder salsa try Herdez green salsa.
Spread the sauce over the frozen burritos and top with cheddar cheese.
Bake in a preheated 350 degree oven for about 45 minutes or until slightly bubbly and hot throughout.

My family loves this meal! I love that I can put it together in a few minutes, and throw it in the oven. Funny how no one liked the burritos, but we all love this Bean Burrito Casserole. I’m so proud of myself for figuring out a yummy way to eat them! 🙂

I have made this meal about four or five times an love it! I only use about half the can of salsa though and add a little cilantro. It has become one of my go-to meals. Thanks for sharing!
