Bacon and Egg Casserole Recipe

Eggland's Best Bacon and Egg Casserole #ad We LOVE eggs!  Whether it be for breakfast, lunch, or dinner, we think a yummy Bacon and Egg Casserole is perfect.  Here’s what’s in the recipe:

Ingredients:
6 slices of bread cut in cubes
2 cups shredded cheese
1/2 cup cooked crumbled bacon (about 8 slices)
1 (4 1/2 oz) can chopped green chiles
¼ cup chopped green onion tops
  6 Eggland’s Best eggs
3 cups milk

Eggland's Best Kid Approved Casserole #adJoy decided to get in on the fun and helped me create this yummy casserole!  We started by taking 6 slices of coarse white bread (about 4 cups), cutting them into cubes, and adding them to a 11×13

baking pan. 

Add Cheese and bacon egg casserole Eggland's Best #adNext add half a cup of chopped bacon.  To save time I keep a bag of real bacon pieces in the fridge to add to my eggs when I’m in a hurry, but fresh bacon is of course delicious too!  Just fry 8 slices, drain, and crumble. 

Green Chiles Egg Casserole Eggland's Best #adNext add the can of green chiles.  The chiles add a lot of flavor without making the casserole too spicy.  We keep cans of green chiles on hand ready to add to any meal. 

Mix ingredients in pan Eggland's Best Casserole #adThen mix the ingredients up right there in the pan.  I get excited any time I can save on dishes we’ll have to wash later! 

Break Eggland's Best eggs for Casserole #adBreaking eggs is so much fun.  All of my kids look forward to breaking them.  I guess it’s the one time I let them break something on purpose!  Ha ha!  But Eggland’s Best eggs are more than just fun to crack.  Compared to ordinary eggs, Eggland’s Best eggs contain more than double the omega-3s, which studies have found may boost attention in kids under 12. Plus, with ten times the vitamin E, a key antioxidant for strong immunity, EB eggs can help to ward off those sick days.

Add milk to eggs Eggland's Best #adNext add the milk to the whisked eggs and stir.  We know the day doesn’t end after the bell rings, EB eggs pack four times the vitamin D, helping the body absorb calcium for strong bones. They also have only 60 calories while ordinary eggs have 70 and also contain 25% less saturated fat, -helping to keep kids light on their toes.

Pour Eggs over casserole Eggland's Best #adThen pour the egg mixture carefully over the casserole.  I don’t add extra salt and pepper to the dish as the bacon usually contains enough salt for me and the chiles add enough flavor, but feel free to add salt and pepper to the egg mixture if you’d like.  That’s it.  Place the casserole in a 375 degree preheated oven for 45 minutes. 

Eggland's Best Kid Approved Egg casserole #adThe casserole should be bubbly even in the middle.  Let casserole set for at least five minutes before serving. 

Eggland's Best Bacon and Egg Kid Approved Casserole #adEnjoy!  This is a huge family favorite for all of our egg loving kiddos.  It is so easy to throw together and can be made ahead of time.  Just assemble and refrigerate until time to cook.  Oven time may need to be increased if casserole has been refrigerated.  You can also cover with foil and freeze.  Thaw overnight in the refrigerator and just put it in the oven in the morning.

    We love egg burrito’s but this recipe looks great! I am going to try it (maybe this weekend). Also, at the top did you notice that you left the word cheese off in the ingredients? I thought you’d want to know 😉
