This was last year’s Cinco de Mayo celebration. Friends of mine in Mexico don’t really celebrate this day at all. They celebrate their independence in September. This became a tradition for me after having taught Spanish. So I just say I’m celebrating my Tex-Mex heritage! Really, it’s just a great reason to cook Mexican food and sit in the dining room with the family!
(Posole was my favorite food when I was little and lived in Mexico! I can’t say that this is the most authentic recipe, but it was really good and super easy to prepare.)

Chips and homemade salsa
Avocado, cabbage, cilantro, radishes, onion, and lime!
I am still trying to decide what to make this year. A must attend event was scheduled for the fifth–how dare they, I know! So, we will probably celebrate on the sixth.
