4 medium potatoes peeled and chopped
1/2 medium chopped onion
1-2 tablespoons bacon grease
salt and pepper to taste
paprika
Fry the onions with the oil until the onions begin to turn clear. Then fry the potatoes until they start to brown. Cover and cook on low for about 20 minutes stirring often until potatoes are soft. Season potatoes and fry uncovered a little longer until brown. I like to sprinkle with paprika. It gives it a pretty color and just a little zing. My favorite way to eat these is with a mixture of ketchup and salsa–yum!

I just love potatoes made like this! They are yummy…especially at breakfast for a real treat time to time.
